white chicken chili recipe

I have a new favorite soup to add to my weekly rotation – white chicken chili.  Okay, it’s a chili, not a soup, but it falls into that soup, stew, chili category that I love so much.  I make a huge pot of the soup du jour at the beginning of each week, store it in jars in the fridge, and we eat off it all week.  It’s easy, quick, healthy lunches and dinners (and Jeff sometimes eats soup for breakfast, but I can’t get on board with that insanity) on hand.  Chili is one of Jeff’s favorites, but I am not a big fan of tomatoes, so traditional chili doesn’t get me too excited.  If I pack it with enough pasta and cheese, I can tolerate it, but that sort of defeats the purpose of eating a healthy soup.  But, I love creamy soups, so a white chicken chili

At the beginning of the new year, I always like to check out my analytics to see the list of the most popular blog posts from the previous year.  I don’t pay too much attention to analytics generally, because I write for people, not for algorithms and search engines, but it’s nice to know which posts were most visited, perhaps most helpful, timely, or resonating.  Interestingly, the top posts were rarely written in that same calendar year.  They are usually posts that have gained some traction on Google, Pinterest, or a social media platform.  For years, my top post was how to make a seat cushion!  (You can find that HERE if you need it.)  It has fallen off of my top ten list and other practical posts have replaced it. Christmas/New Year break recap

I hope you had a wonderful Christmas and, if you were able to take a break around all of the holidays, an enjoyable, rejuvenating downtime.  While I took time off from posting on this blog, I spent a lot of time painting, writing, planning, thinking, and a bit of organizing.  But, I also slept in, made Bavarian pretzels and Rosa’s fruit salad, watched movies, went on walks, and took the days at a gentle pace.  I was also, at times, a human cat bed.  I am coming out of this break feeling rested and excited about what this year holds. One of my Instagram followers said it best, “You’ve been Mondaying hard this week.”  Based on the snippets I’ve shared on Stories, I can see why it would look that way.  Sunday afternoon I dropped my palette paint-side-down on the floor.  Less than an hour later, I put a hoodie in the wash (because I got paint on it) and thought it was heavy because the sleeves I had already cleaned were wet. I learned about 15 minutes later that it was heavy because my iPhone was in the pocket.  Miraculously, it still worked.  I put it in front of a fan for a few hours and it’s been fine.  So far, anyway. Then, Tuesday night, I kept waking up because my left foot hurt.  I couldn’t get it in a comfortable position and finally got out of bed around 5:00 to see if I could stretch it out. I

winter butternut squash soup recipe

As we were working out the Thanksgiving menu this year, my sister-in-law said she’s been really into butternut squash so she was going to make butternut squash soup.  As you may have ascertained from my recipe collection, I am a soup fan.  I love that I can make a big pot on Sunday or Monday and it provides quick and healthy meals for the next few days.  I’m always looking for new soups to add to my rotation and, as soon as I tasted this soup, I knew I would want to add it.
