Mix it all into a shallow dish or plastic bag and let the meat marinate for about 30 minutes.
Add a tablespoon of olive oil to the pan and preheat it over a burner turned to high heat.
Cook for about 5 minutes per side
Allow the meat to rest for 5-10 minutes
Add a bit more red wine and a pat of butter to the pan and let it reduce to make a nice jus to pour over the steak.
Once the steak has rested, I slice it on the bias and at an angle, against the grain. This makes a tough cut of meat much more tender.
