Marinated Skirt Steak

Ingredients
  

  • 1 Cup Red Wine
  • 1 Tbsp Olive oil
  • 1 Tbsp Soy sauce
  • 1/2 minced onion
  • Fresh thyme leaves
  • Juice from 1/2 lemon

Instructions
 

  • Mix it all into a shallow dish or plastic bag and let the meat marinate for about 30 minutes.
  • Add a tablespoon of olive oil to the pan and preheat it over a burner turned to high heat.
  • Cook for about 5 minutes per side
  • Allow the meat to rest for 5-10 minutes
  • Add a bit more red wine and a pat of butter to the pan and let it reduce to make a nice jus to pour over the steak.  
  • Once the steak has rested, I slice it on the bias and at an angle, against the grain.  This makes a tough cut of meat much more tender.
