marinated skirt steak & an All-Clad giveaway

The pot rack in my kitchen might be the one thing in my house that we installed a week after we moved in 10 years ago and hasn’t moved an inch.  It’s never even been under threat of being moved.  I love, love, love my pot rack.  That’s an odd thing for me, because it’s not an antique, but it is so functional and I honestly like having all of my pretty pans and copper pots on display.

And yes, I use them.  Not all of them, but I use most of them.

Most of the pans I’ve picked up here and there at discount stores and even yard sales.  (I bought that gorgeous antique copper bunt pan from a German woman at a yard sale in Florida for $25.)  Some of them have been Christmas presents, too, from the time when I was a Food Network junkie and wanted to amass any gadget or tool Alton Brown told me was a must have.

Two of my prized pans, though, are my All-Clad pans.  I bought both of them, one at a time, about 12 years ago.  I bought my 3 Qt Saucier with my birthday money and I found my Copper Core 10″ Fry Pan at a discount at HomeGoods.  I was giddy over that score.  I splurged on both and have had no regrets.  They are my favorite pans.

When All-Clad noticed I used a couple of their pans, they asked if I would like to try another one and give one away to my readers!  Well, yes!  I get to partner with a lot of brands, but I especially love it when I get to partner with brands that I have loved and spent money on long before I became a blogger.

So, the pan they sent to me to try is the d3 Armor Fish Pan.  Now, I actually love fish, but I was very spoiled by my Opa, who would take me fishing and we would cook those fish that night.  Nothing else can compare, so I don’t cook fish, but the pan is also great for searing steaks and cooking other delicate, awkwardly-shaped foods, like skirt steaks, butterflied chicken breasts, and omelets.

The riveted surface on the interior of the pan promotes effortless release, so delicate foods don’t stick.

The pan was the perfect shape and design for cooking one of Jeff’s favorite recipes, a marinated steak.  His mom usually makes it with flank steak, but I had skirt steak on hand, so I used that.  They are both tougher cuts of meat that benefit from marinating and quick cooking.

The marinade is about a cup of red wine, 1 T olive oil, 1 T soy sauce, 1/2 minced onion, fresh thyme leaves, juice from 1/2 lemon, and pepper.  I don’t measure things out, but throw it all into a shallow dish or plastic bag and let the meat marinate for about 30 minutes.

Once the meat was ready, I added a tablespoon of olive oil to the pan and preheated it over a burner turned to high heat.

Preheating the pan is the key to getting a nice sear (or crust) on steak.  If you put meat in a cold pan, that just won’t happen.  Cook about 5 minutes per side.

I used to be nervous about food sticking and used coated pans for everything!  But, several years ago (during the Food Network junkie years), I learned how to cook food properly, so it doesn’t stick.  Putting food in at the proper temperature and not messing with it until it sears is one of the things I learned.

Allow the meat to rest for 5-10 minutes.  During this time, I like to add a bit more red wine and a pat of butter to the pan and let it reduce to make a nice jus to pour over the steak.  Once the steak has rested, I slice it on the bias and at an angle, against the grain.  This makes a tough cut of meat much more tender.

I’m not a huge meat eater, but I do like a nice grass-fed steak now and then and this one is my favorite.

      I would absolutely love to win this pan. I have only 1 All-Clad pan and use it almost daily. I have had it about 10 years and it’s still just as shiny as ever. It’s a small omelette pan and after using we let it cool then run hot water and add dish detergent and let it sit for awhile. Scrambled eggs wipe completely off. We then just wash with dish detergent and rinse and dry. It’s stainless steel so no one can tell me it’s difficult to cook with stainless steel.

      I worked for several years in a major department store and I always recommended All-Clad to my customers looking to purchase cookware. It’s the best you will find in any store.

That said, I bought a couple of French carbon steel pans a while back and seasoned them according to instructions. Even eggs don’t stick to them. Professional cooks use them a lot, but they do get discolored and cease to look pretty with use. Not really for display–unless you don’t mind letting people know that you’re a serious cook!

I lived in a farmhouse with a small kitchen so I hung Ikea racks over the windows and hung my pots and pans there. They formed a kind of valance for the window but were handy to just grab and use.

      All Clad is about the best cookware available. If it is just not in your budget, one good piece such as a skillet can be used for many things and is worth the sacrifice. The skirt steak is awesome for fajitas too as well as served with a chimichuri sauce. Your skirt steak looks really good. I would personally love love to use this pan as I only have one All Clad piece 🙂

I always chuckle when people get sooooo wrapped up in having a special pan, knife, spoon or whatever for different tasks. Yes, specialized pans are great but for heavens sake, just get in the kitchen and work with what you’ve got!

        Ha! “Kitchen fuzz”! I love it. I actually use many of the pots and pans regularly, so they don’t get gross. Some of the copper pans that are just for looks, like the antique bunt pan, need to be cleaned once or twice a year.
